Boxed muffin mix

Today is a nice cool, drizzly day. Which is a real treat for Southern California. There’s nothing I love more than waking up on a cool morning and taking my time. I love spending way too long in my pajamas, leaving the beds unmade for half of the day and starting school after 9:00, sometimes 10, and sometimes not at all. (one of the perks of homeschooling, we take holidays whenever we want) Today is one of those glorious days! It’s just after 9:00 and we’ve hardly gotten anything done. It won’t be all day, we actually have lots of school work that can’t be neglected right now and a ton of chores to catch up on. But, I did one of my favorite things. Baked a fresh batch of muffins.

I love homemade muffins! They’re soft, warm, fresh and not as sugary and sweet as the big store bought ones. Often, I’ll make muffins from scratch. It’s pretty simple and I always have ingredients on hand to make some sort of muffin. One of my favorites is apple, carrot, coconut made with whole wheat flour, coconut oil and honey. They’re actually really yummy. Today though, I just wanted something warm and fresh from the oven. I opted for… Boxed muffin mix, and I’m totally okay with that! I know it’s not the healthiest choice and my waistline sure doesn’t appreciate it. It’s full of sugar and preservatives and everything terrible. I don’t really care, I just want some fresh muffins for me and my kids. I’m tired after waking up all night with a baby. I’m tired just thinking about the piles of laundry I have to get done today. Muffin mix from a box was the easier choice today. Better to have boxed muffins than no muffins at all! The things I’m hoping my boys will remember the most when they look back at their childhood are the small, thoughtful moments like these. The days I took the time to do one little special thing. It’s easy to forget to create special moments, best to fit them in however I can. Whether it be muffins, skipping out on some chores or neglecting that mandatory workout. Every once and awhile is okay. Not just okay, but good! So, next time I’m at the store, I’ll buy a box of muffin mix to keep on the shelf for a rainy day. And be okay with it.

  1. My mother used to make bran muffins from scratch, and not the sweet, cakey oatbran kind, but the dark, stodgy wheat bran variety. We loved them, and even though I can no longer eat them, I miss the comforting warmth of them on cold mornings. My mom was about making everything from scratch and I remember waking up to the smells of her baking. I know that your boys will appreciate what a great mom you are, even when they are my age.
